Recipe for Awwamat
Lebanese Donuts



Ingredients:

2 cups flour

1/4 teaspoon yeast dissolved in 1/4 cup of warm water with 1 tablespoon of sugar

1 cup plain yogurt (laban)

1/4 teaspoon salt

Oil for deep frying

Mix dissolved yeast with flour and yogurt, add salt, beat well with electric mixer or knead by hand. Cover and set aside to ferment overnight. When ready to fry, drop a tablespoonful into heated oil and fry until golden brown. Drain them on paper towels, place them on a serving tray and drizzle them with orange blossom syrup. If you wish, you can dust the balls with confectioner's sugar instead of syrup.



Syrup ingredients:

3 cups sugar

1/2 cup water

2 teaspoon lemon juice

1 teaspoon orange blossom water (Ma-zzaher)

Put sugar and water into a saucepan. Bring to a boil and add lemon juice. Boil for five minutes, then add mazzaher. Cool and store in glass jars in the refrigerator until needed.
